Well, you can try introducing her to men that you think are suitable.
I know that I accidentally brought my mom and stepdad together because I gave them a chance to talk at Radio Shack. He was working there part-time on the side and I had needed something for my phone.. They met, and a year later were married.

First you have to make sure your mom wants to date. Then try to take her places where she'll meet men with the same interest. For example, if she likes art and museums, plan trips with her thrre cause if she bumps into a guy there he might be someone she'll like. That's just an example.
